Why
America's Test Kitchen rates the Wüsthof Classic Recommended, not a top pick: the blade "was quite sharp, but because its spine was so thick and the knife overall was hefty, it sometimes felt a little less nimble than testers liked." ATK's winner, the Victorinox Fibrox Pro, handled every task at about a quarter of the price. If you want to spend more, ATK's upgrade pick is the Shun Classic, not the Wüsthof.

Fibrox Pro 8" Chef's Knife

America's Test Kitchen's winner, recommended "for nearly three decades": "With a sharp, gently curved blade, it effortlessly dispatched every task we set before it," and it's light, with a handle "comfortable to grip for hands of all sizes." It's about 3 oz lighter than the Wüsthof (5.9 vs 9 oz). Plain looks, but "over the decades, it's proved itself to be a steady, stalwart companion for many cooks."

America's Test Kitchen's Best Buy: "Costing about half the price of our winner," it has "a blade that's nearly identical" to the Victorinox. ATK rated it Highly Recommended, a step above the Wüsthof. One quibble: the bumpy rubber handle is "so grippy that it sometimes impedes movement." ATK didn't test long-term durability, and the listing doesn't state a warranty.
