America's Test Kitchen's winner for 15-degree knives, producing "truly exceptional and consistent results quickly, neatly, and efficiently," and it quickly removed a notch ATK cut into a blade. But ATK's Best Buy, the Chef'sChoice 315XV, earned identical star ratings for about half the price. ATK noticed "only a minor difference in cutting performances," though edges from the 315XV may need sharpening slightly more often.
