What the testers found
TechGearLab's Best Overall Knife Sharpener: "An efficient and easy-to-use knife sharpener that works for a wide variety of knife types and scissors, too." It beat the 15XV on sharpening ability and takes less than half the space. The catch: it doesn't hold a 15-degree edge. TechGearLab found it reset a 14° blade to 20°, and "the E2 isn't quite able to reset a factory edge." America's Test Kitchen didn't test the E2, and it chose the Trizor for 15-degree knives; TechGearLab found the Trizor "messes with edge angle" too.
